Vers Cras is one of Domaine Cordiers top single-vineyard offerings, with some of the lowest yields in Burgundy at around 20 hectolitres per hectare. Using around 30 new oak barriques to give the wine richness and roundness, whilst the low yields supply ripe fruit. With a Puligny-esque clarity and the ripe fruit kept in check with linear acidity, this wine fills the mouth but has an elegance and mineral quality matched by few in Burgundy. Match with seared scallops, fresh salmon or lobster.
